Almond Joy Layer Cake 2/3 cup unsweetened cocoa powder 1 stick (4 ounces) unsalted butter, cut into 8 pieces 3 ounces semisweet chocolate, chopped (about 1/2 cup) 2 1/4 cups granulated sugar 4 teaspoons pure vanilla extract 1/2 teaspoon salt plus a big pinch 3 eggs 1 1/2 cups flour 1 1/2 teaspoons baking powder 1 teaspoon baking soda 1 bag (14 ounces) sweetened shredded coconut (4 packed cups) 2 cups sliced almonds 3 cups heavy cream 1/3 cup confectioners sugar 1. Preheat the oven to 325 degrees . Butter two 8-inch-by-2-inch round cake pans. Line with parchment and butter the parchment. 2. In a medium saucepan, bring 2/3 cup water to a boil. Whisk in the cocoa powder until smooth. Whisk in the butter and chocolate over low heat until melted, about 2 minutes. Remove from the heat and whisk in 1 1/2 cups granulated sugar, 2 teaspoons vanilla and 1/2 teaspoon salt. Whisk in 1 egg at a time, beating well after each addition. 3. In a large bowl, stir together the flour, baking powder and baking soda. Pour in the chocolate mixture until smooth. Stir in 1 packed cup coconut. Divide the batter between the pans and bake in the lower third of the oven for 35 minutes or until firm in the center. Let cool in the pans on racks for 10 minutes, then invert onto racks to cool completely. 4. While the cake cools, spread the almonds on a rimmed baking sheet and toast for 12 minutes; let cool. 5. In a saucepan, combine 3/4 cup cream, the remaining 1/4 cup granulated sugar and pinch salt and simmer, stirring, over medium heat until the sugar is dissolved, about 3 minutes. Remove from the heat and stir in the remaining 2 teaspoons vanilla and 3 packed cups coconut. When cool, fold in 1 1/2 cups almonds. 6. Split the cake layers to make 4 layers. Place 1 layer cut side up on a cake stand and spread with 1 cup of the coconut-almond mixture. Top with the second layer cut side down and spread with 1 cup more of the mixture. Repeat with the remaining 2 cake layers and filling, spreading the filling on the top. Cover the cake with plastic wrap and refrigerate for 4 hours to firm up. 7. Whip the remaining 2 1/4 cups cream with the confectioners sugar until stiff. Spread over the cake. Sprinkle the top with the remaining almonds.

Drain artichokes; reserving the marninade. 2. Saute onion and garlic in marinade for 5 minutes. 3. In a large bowl; beat eggs. 4. Add bread crumbs; salt; pepper; oregeno and tabasco. 5. Stir in cheese; parsely; artichokes; and onion mixture. 6. Pour into partially baked pastry shell and bake at 325F for 45 minutes. 6 servings

Let the mixture marinate for about 10 minutes. Strain off excess liquid. Divide into equal portions and roll in wonton wrappers. Beet and Beet Greens Gratin 2 small bunches of beets with greens (about 3lbs total) 2 tbs butter 2 tbs flour 1 1/2 c milk 3 cloves garlic minced salt and pepper to taste 1/2 cup flavored bread crumbs 1. Seperate greens from beets. Steam beets. Cool and peel off skins. Save water. 2. Trim stalks from greens. Stack greens and roll like cigar. Cut crosswise 1/2" wise ribbons. Wash and drain. Add to the pot with steamed beets. Steam until wilted. 3. While greens steam; heat butter. Add flour and stir over moderate heat until well blended. Add milk and stir until sauce comes to a boil. Reduce to a simmer; add garlic; salt and pepper and stir until it thickens to consistency of light cream sauce. Turn off heat. 4. Preheat oven to 400. Cut beets into 1/2 cubes and add to saucepan with cream sauce. Add greens and juice to saucepan. Combine well. 5. Add mixture to buttered 2 quart baking disk. 6. Sprinkle with bread crumbs and bake 25 miutes or until top browns nicely and cream sauce bubbles up.

Combine 1 c chocolate wafer crumbs; 1/4 c softened butter; 2tbsp sugar; and 1/4 tsp cinamon 2. Mix well 3. Press mixutre into buttered springform pan Preperation 1. Prepare curst as above. Set aside. 2. Boil water. 3. Beat cream cheese until smooth. Graduallt add sugar; mixing until well bleneded. 4. Add eggs; one at a time. Beat at a low speed until smooth. 5. Melt chocolate with cream over boiling water. Stire until smooth. Blend well with cream cheese mixture. Add sour cream; salt; coffee; 1 cup coffee liquer and vanilla. Beat untl smooth. 6. Turn into pan. Bake in center of oven at 350F for 45 minutes of until side are puffer. Center will be soft but will firm up when chilled. Turn oven off; leave door ajar. Allow cake to cool in oven for 45 minutes. Cover. Chill for 12 hours. 7. Whip cream. Flavor with suga and remaining liquer.Garnish with mounds of whipped cream and chocolate leaves.

Bake in a 350 degree oven for 35-40 minutes until slightly firm. Let cool for 15 minutes. Drizzle 1/2 cup of white chips over brownies and cut.

. Coconut Shrimp 1 pound large shrimp 1 egg 1/2 cup milk 2 tbsp sugar 1/2 cup of flour or tempura flour 4 cups of shredded coconut paprika Peel and devein the shrimp leaving the tails for handles. Combine milk and egg in a bowl and whip until well blended. Place the flour on a small plate. Place the shredded coconut on a larger plate. Dip the shrimp into the egg/milk. Next flour the shrimp. Dip in the egg/milk. Place in the shredded coconut and press the coconut onto the shrimp on both sides. Method 1: Heat a deep pan with enough oil to completely submerse the shrimp. Fry until golden brown. Method 2: Heat the oven to 350 and place shrimp on a well oiled pan and bake until golden brown usually about 3-4 minutes. Remove from the heat and drizzle with Plum sauce. I like to use a store bought product by SunLuck.

Return to heat; cover and simmer 15 minutes. sprinkle peas and red pepper evenly over noodel mixture. Cover; simmer 5 minutes longer; or until water is absorbed. remove from heat; let stand 10 minutes. Meanwhile; brush small non-stick skillet lightly with oil; heat. add egg; tilt pan from side to side to spread egg; cooking until set. Remove and cut into thin strips. Add to noodle mixture; stirring to combine
. Dawn’s Quiche Blend together: 3 eggs 1 1/4 c. half and half dash of salt Combine: 1 cup grated Swiss cheese 10 oz drained spinach 1 1/4 cubed ham Layer in uncooked 9 inch pie shell. Egg mixture then filling; repeat. Dot with butter if desired Bake at 375 degrees for 25 – 30 minutes till pie sets in oven.

Cook over high heat sirring contantly until mixture boild and thickens. 6. Gradually por egg into boiling soup. 7. Remove from heat and add onion and soy sauce.

Cook in med. pan on med heat for 10-15 minutes. Cook thru. 2. New pan. Oil to pan. Heat on med. Add garlic; onion and cook until soften (5 minutes). Add to cooked sausage. 3. When cool; put sausage in food processor. Chop finely. In bowl; add sour cream; salt; pepper; and chile. 4. Assemble dough sheet. 3" round cutter. Spoonful in each dough circle. 5. Crimp edge with fork. 6. Lightly brush w/ oil 7. Place on baking sheet. 8. Bake 450F until golden brown (10-12 minutes)
. Empire Kosher Broiler Chicken 1 chicken split 2/3 c Dijon Mustard 1tbsp cayenne pepper 1/4c oil 2tbsp wine vinegar splash orange juice 1. Stir together ingredients. Place chicken in zip lock. 2. Remove from heat. - In a large bowl; combine melted butter; peanut butter; eggs and cake mix. - Stir until dough holds together. - Press 2/3 of dough into bottom of ungreased 9x13 baking pan. - Reserve remainin dough for topping. - Spread filling over doygh pan. - Crumble reserve dough over filling. Bake at 350 for 25 minutes. Cool and cut into bars.

Cook rice accoringing to directions 2. Rinse Tofu puffs with hot water and squeeze them. Cut them in half. 3. Cook Tofu puffs in boiling hot water; add sugar; cooking sake; soy sauce and simmer till sauce disappears 4. Mix warm rice with seasoned rice vinegar. 5. Squeeze Tofu puffs lightly. Stuff Tofu puffs with rice. If hands become sticky; dip them in a solution of vinegar and water. 6. Make 6 servings (3 inarizushi per person)

Rice Pancakes 1-1/2 cups leftover Cooked Rice; white or brown 2 cups buttermilk or yogurt or soy yogurt or Sour Soy 2 cups white or whole wheat flour or half each 1/2 teaspoon salt 2 medium eggs 1 teaspoon baking soda Use a fork or a potato masher to mash the rice for a minute or two. This is a tiny bit of a nuisance; but it is what gives the pancakes their special texture. After the rice has been mashed a little; then add the rest of the ingredients. Use a whisk to stir everything up until it makes a light and creamy batter. If you use yogurt as your milk product; the batter may be very thick; depending on the thickness of your yogurt. Sometimes; I add water to the batter to thin it out enough for frying. Use your best judgment if the batter seems very thick to you. Fry these in a hot skillet or griddle; turning them when they are brown on the bottom. I use 1/4 cup of batter for each pancake to keep them small; and manageable. They are so tender; that frying big ones is a little tricky; so keep them smallish to be on the safe side.

Arrange onions in single layer on prepared sheet. 5. Bake onions until brown at edges and tender (about 49 minutes). 6. Cool 7. Mix mayo; basil; lemon juice; lemon peel. and 2 tbsp oil in small bowl. (onions and mayo can be made 2 days ahead of time and chilled). 8. Spread mayo over cut sides of bread. Place bottom halves on plates. Top with roast beef; onions; and arugula. 9. Cover with top halves of bread.

White Chocolate Bread Pudding with white chocolate sauce 8 oz French Bread; cut into 1 inch pieces 3 1/2 c whipping cream 1c milk (do not use low or nonfat) 1/2 c sugar 18 oz good quality white chocolate (Lindt or Baker's) coursely chopped 7 large egg yolks 2 large eggs 1. Preheat oven to 275F. Arrange bread cubes on baking sheet. Bake until golden and dry; about 10 minutes. Transfer baking sheet to rack; cool completely. Increase oven to 350F. 2. Combine 3c whipping cream; 1c milk; and 1/2 c sugar in heavy sauce pan. Bring to simmer over medium heat; stirring until sugar dissolves. Remove from heat. Add 10 oz white chocolate (about 1 3/4 c) and stir until melted and smooth. Whisk yolks and eggs in large bowl to blend. Gradually whisk in warm chocolate mixture. 3. Place bread cubes in 2qt glass baking dish. Add half of chocolate misture. Press bread cubes into chocolate mixture. Let stand 15 minutes. Genetly mix in remaing chocolate mixture. Cover dish with foil. 4. Bake pudding 45 minutes. Uncover and bake until top is golden brown; about 15 minutes. Transfer pudding to rack and cool slightly. (Can be prepared 1 day ahead. Cover with foil and refrigerate. Rewarm covered pudding in 350F oven for 30 minutes before serving.) 5. Bring remaining 1/2c cream to simmer in heavy medium saucepan. Remove saucepan from heat. Add remaining 8 oz white chocolate and stir until melted and smooth. 6. Serve pudding with warm white chocolate sauce. Serves 6
